I'm posting this topic here to help others better find a solution, but in short a VERY LONG WINDED post can be found here
but in short our 07 WK Hemi was randomly stalling creating very dangerous situations. After a year of attempts including a 6 month stink in the shop, it was given back as "unrepairable."
I wouldn't wish this issue on anyone, but in my crawling of the web via Google - I'm not alone on this issue apparently.

in my final update. The short version is the gas tank needed replaced due to a failure in the EVAP system / portion of the filler neck / tank I believe (sorry, I lack the technical expertise on this topic to be honest). While we never spent the money for the repair (Chrysler refused to pay for it due to an ongoing lawsuit by then), I did prove my internet technician's theory was correct when we drove the vehicle for almost 5 months without stalling once by not filling the tank the entire way.
I hope this helps someone and a quick repair can replace the bad taste left in my mouth of a once loved vehicle in my fleet!
