I have taken out my S-10 dash out a couple of times, but it havent settled perfectly in its OEM place as it should everytime i install it again.. its hard work.
For the dash. I would look carefully of the risks of chipping the paint, the dash is not all that hard in some areas.
Another option would be to get a good vinyl on it and before you dismiss the idea up front, please try to get a first hand look, as in touching, the 3M DI-NOC architectural finishes (http://www.idsfinishes.com/gallery/
). There stuff is amazing and they are printed in 3d so there is a texture to it. They even have suede, carbon fiber and several leathers. They were at SEMA this year as well. Problem with vinyl is that you will need a primer so it can bound to the dash and, once primed, there will be no going back.
A third option would by hydro-transfer. That will last for ever and have a perfect finish. If you do not know the process, take a look here http://www.waterprinting.com/
you'll see a dashboard. I know several SRT8 guys have used patterntek (http://www.patterntek.com/
) for some carbon fiber printing and everybody seemed happy with results. Its unidementional and it will be challenging to find a place that will be able to do the entire dash. It will cost you too.
I read that carpets are easier changed but dying them seems a better way to go IMO. Pillars and headliner have been done before and is easy and "relatively" easy. What is the color of your visor, handles, center console light ... you might have to look into this too and those can be painted.
